Burundi

In Burundi, an entire trade changed when the fish were lifted a metre off the sand.

Along Lake Tanganyika, women had for generations dried small fish directly on the shore. It took up to three days. Fish were trampled or spoiled by rain, and sand and small stones ended up in the food.

Then simple mesh racks were tried above the ground. Drying suddenly took around eight hours. Waste was more than halved, and the fish could be sold for more than twice the price.

The idea spread fast. Fish dried directly on sand is now a rare sight.
