Random Sand Fact

In Peru, fish is laid out to dry directly on sand as part of an old method still used along the country’s central coast.

Anchovies are salted and then laid directly on sand, or on a thin net just above it. Sand is part of the method itself: wood or plastic can become too hot and start cooking the fish instead of drying it.

After a few days, the fish is collected, cleaned and used in traditional dishes. The method has been recognised as part of Peru’s national cultural heritage, and the dried fish is used in the local dish charquicán.
